Kathy - I do have a recipe for Bisquik from scratch that some home extension office gave me over 20 years ago. I t had pages and pages or recipes you could make from it...and any Bisquik recipe also worked just as well...... I think I still have the recipe.

alas - I don't use it now that I've not figured out how to do it without the shortening in it....but I was thinking about this very thing on vacation. LOL

My pancake mixes were a hit and I was asked to make more to have on hand here....and I began to remember the ease of that homemade bisquik mix ready to go at any moment......Let me know if you find a recipe without shortening in it.....

Hi Kathy!

Our easy meals typically include some kind of grilled meat (especially chicken breasts... they're a staple at our home!) and grilled veggie. (Tossed in olive oil, salt and pepper, then grilled until slightly charred but still crunchy. Yum!) Add a starch and you've got a well-rounded meal. The whole meal (assuming the meat is thawed) can be prepared and on the table in about 30 minutes.

However, if I REALLY don't want to cook, I try to keep a few emergency meals in the freezer that I can pop in the oven and not have to think too hard to get dinner on the table.

Your apple dessert looks yummy. I'll have to try it! Casseroles don't go over too well here since hubby ate so many growing up in North Dakota. :)

I know that I have read a recipe for a "homemade" Bisquick mix somewhere, but I can't remember (De'Etta, maybe? She is the queen of making stuff from scratch). The apple pie looks really yummy!

It probably wasn't a problem of you not "flavoring" it enough. After awhile, all the bisquick things seem to sort of taste the same (LOL) - imo anyway.

Kathy, as a fellow sugar- and flour-free mom, I'm curious: What are you eating while the family chows down on Easy Lasagna Squares?

My easy meal staples are kielbasa and cabbage, spaghetti and meatballs (frozen meatballs from Costco), chicken or pot roast in the crock pot, that sort of thing.
